Morning Munchies | Two-Ingredient Pancakes!

A quick, healthy and affordable breakfast option, perfect for back to school!

TEMPLE, Texas — Dear Central Texas Parents,  

With school starting back up, it is understandable to want something quick and easy but also healthy and affordable for the kids. Unfortunately, time is rarely on your side so early in the morning and healthy options can be hard to come by. Fortunately, morning munchies found the perfect blend (pun intended) of quick, cheap, healthy, and tasty: banana pancakes!  

RECIPE 

The cooking time for this recipe is 15 minutes for 2 servings.

The ingredients are simple: 1 banana and 2 eggs. Making this recipe low-carb, low-calorie, dairy-free, nut-free, soy-free, vegetarian and grain-free. Although for added sweetness, dress your banana pancake as you would any other pancake with blueberries, chocolate chips, peanut butter, powdered sugar etc. 

IMPORTANT  

Banana’s are excellent sources of potassium, vitamin B6 and vitamin C. According to healthline, bananas are full of antioxidants and may benefit weight loss, digestion, and heart health.  

Similarly, eggs are a nutritious protein source and according to EatingWell, they contain vitamin B12 and all nine essential amino acids that your body cannot make on its own.  

DIRECTIONS 

First, puree your eggs, banana, and any other add-ins you decide, in a blender until smooth.  

Then, lightly oil or butter (the recipe calls for oil, but I found it easier to flip and not have the pancakes burn quickly by using unsalted butter) a non-stick skillet and heat over medium heat.  

Next, place 2 tablespoons of your mixture for each pancake onto the pan. Cook for about two minutes or until bubbles begin to form on the surface (as you would a normal pancake). Then rinse and repeat for your entire batch!  

Your batch will contain around 11 mini-pancakes.  

RECOMMENDATIONS 

These banana pancakes will pair well with any original pancake side but to keep things healthy, fresh strawberries, blueberries or raspberries are the perfect pairing.  

To keep the pancakes from falling apart while cooking it is important to keep them small. Smaller pancakes will be easier to flip and quicker to cook; saving you time!
