Morning Munchies | Learn how to make Mangú!

Mangu is a Dominican-style mashed plantain dish that can be served for breakfast, lunch and dinner!

TEMPLE, Texas — Today's Morning Munchies is my personal favorite Hispanic breakfast option: Mangu! This Dominican-style mashed plantain dish is extremely versatile and delicious. 

Mangu is a dish I grew up eating, no matter the time of day. For breakfast it's usually paired with los tres golpes (the three hits) fried egg, cheese and salami!

For lunch, it was either the same as breakfast, or mangu all by itself with the essential caramelized & pickled red onion garnish. Lastly for dinner, chicken could be thrown into the mix! 

Mangu is an incredibly quick, easy and affordable meal to make! 

THE INGREDIENTS: 

- Plantain (think one plantain per person) 

- Butter

- Salt

- Water

First, peel and cut up your plantain into four pieces. This will make it quicker to cook and easier to mash. Place the plantains into a pot of boiling water with some salt. The plantain is ready to take out when it has turned more of a golden yellow and is soft enough to easily put a fork through. 

Remove the plantains and place them into a separate bowl. Begin to mash with your fork immediately, periodically adding room temperature water, butter and salt to taste. Eventually the mangu will be smooth and creamy. 

As for the 'essential' onion topping, it is also quick and easy. 

THE INGREDIENTS: 

- Red Onion

- White vinegar

- Salt

- Vegetable oil

First, chop up your onion into strips. I usually go for thinner strips but this part is up to you. PRO TIP: place a damp paper towel near the onion you're cutting to avoid tears in your eyes!

Next, place your onion into a bowl of white vinegar and salt. Let that marinate for about five minutes. Eventually the vinegar will turn pink. 

Then, warm a tablespoon of vegetable oil into a frying pan and start to cook your pickled onions. Eventually the onions will caramelize - place them on top of your mangu and you're good to go! 

You will NOT be disappointed. Enjoy!
